Country Cookbook: Weird Appalachian Foods

Another characteristic that sets Appalachia apart from the rest of the United States and even the world is the fine dining. Sure, there’s the southern classics, fried everything and Mama’s home cooking, but the mountain dwellers have more delicacies from their unique palettes. These mouth-watering menu items aren’t found anywhere else, so next time you visit, make sure to get a sample and a copy of the recipe, if they’ll part with it.

Corn Cob Jelly: A combination of boiled corncobs, sure-jell, and sugar, served and eaten like standard jelly on bread.

Bacon Muffins: Basically standard muffins mixed with bacon drippings and chopped bacon.

Apple Stack Cake: Much like a torte, but looks like a stack of thick pancakes with apple preserves, dried apples, or apple butter oozing out between each layer.

Chocolate Gravy: Exactly what it sounds like, served on breakfast biscuits.

Cherokee Pepper Pot Soup: Beef short ribs stewed with tomatoes, onions, turnips, potatoes, and corn.

Mountain Molasses Stack Cake: At a party, guests bring a cake layer for the hostess to smear with fresh apple butter and stack on top of the layers brought by other guests.

Dandelion Wine: A midsummer, homemade wine.

Common Hoe Cake: Fried on the griddle, these white cornmeal flat cakes fried are covered in ashes from the fire and baked until brown on a hoe propped in front of the fire.

Stuffed Possum: Dressed possum stuffed with breadcrumbs, salt, red pepper, Worcestershire sauce, butter, onion, and egg. Add the possum’s liver to the stuffing for extra flavor.

Pickled Crab Apples: Add six cups of vinegar, eight cups of brown sugar, cloves, and cinnamon to eight pounds of crab apples in boiling water. Can them in jars and add syrup. Seal for a cold, winter treat.

Black Walnut Cookies: Delicious sugar cookies with two cups of chopped black walnuts. An Appalachian classic.

Cracklin’ Corn Bread: What makes this corn bread ‘cracklin’? Pig skins!

Even if you can’t make it down to Appalachia to try these delicacies in their native habitat, why not try whipping up some in your own kitchen? Who says the South has to stay in the south?
